In the Northwest heat, youngest ever Michelin starred chef Aiden Byrne, cooked his fish course of beetroot poached salmon with our Ebène caviar, razor clam, citrus and fennel salad.
The dish stunned the judge, 2 Michelin starred chef Marcus Wareing, and during the scoring he said:" You and I struggled in the tasting room to find a fault. I loved eating it. For me that was a complete dish."
